Kitchen / camp food
One-pan shakshuka
- Serves
- 2 to 3
- Time
- 25 min
- Made
- Camp stove, anywhere with a flat rock
Ingredients
- 1 onion, sliced
- 1 red pepper, sliced
- 2 cloves garlic
- 1 tin chopped tomatoes
- 1 tsp cumin, 1 tsp paprika, pinch of chilli
- 4 eggs
- Bread, the whole loaf
- Olive oil, salt
Steps
- Oil in the pan, onion and pepper on medium until soft. About eight minutes. Don't rush this.
- Garlic and spices for one minute until it smells right.
- Tin of tomatoes in, salt, simmer ten minutes until it thickens. Stir so the bottom doesn't catch.
- Make four dents, crack an egg into each, lid on (or a plate), four minutes for runny.
- Pan in the middle, bread in hands, no plates.
The camp dish I make more than any other because it’s one pan, one tin, and you can buy everything at the last shop before the road gets bad. Tastes like home, which is the point when you’re not there.
